Claus Meyer will in the company of his private guests trace a vinegar’s journey from raw food through double fermentation and onwards to become a 17 year old balsamic nectar stored in handmade juniper barrels each holding 15 liters.
The excursion begins at Nordhavn Vinegar brewery in Copenhagen’s North Harbour district. We’ll sample a range of pure fruit vinegars alongside younger barrel aged varieties. Then we’ll bike together to visit Claus’ private vinegar stock in his home at Frederiksberg.
Here we’ll taste mature fruit vinegar crafted following the “tradizionale” method, which serves as the base for some of the world’s most desired vinegars. A wave of snacks and a great glass of wine will ensue as a proper finish to of the experience. The ticket price includes a bottle of vinegar made from Danish Riesling grapes – a raw material found in very limited quantities.
